Grilled Asparagus & Burrata Salad
Charred spring asparagus over creamy burrata with toasted pine nuts, preserved lemon, and a bright herb oil.

How to Make It
Grill the Asparagus
Preheat grill or grill pan to high. Toss asparagus with 1 tbsp olive oil, salt, and pepper. Grill 3–4 minutes per side until tender with good char marks.
Make Herb Oil
Blend remaining olive oil, basil, mint, white wine vinegar, chilli flakes, and a pinch of salt until bright green and smooth.
Toast Pine Nuts
Toast pine nuts in a dry skillet over medium heat, 3–4 minutes until golden.
Plate the Salad
Arrange grilled asparagus on a large platter. Tear burrata over the top. Scatter pine nuts and preserved lemon.
Finish & Serve
Drizzle generously with herb oil. Add extra basil leaves and flaky sea salt. Serve immediately.
