Silky Spring Pea & Mint Soup

How to Make It
Soften the Aromatics
Melt butter in a large pot over medium heat. Add onion and cook 8 minutes until soft. Add garlic and cook 1 minute more.
Add Stock & Peas
Pour in stock and bring to a boil. Add peas and cook 3–4 minutes (fresh) or 2 minutes (frozen) until bright green.
Blend Until Silky
Remove from heat. Add mint. Blend until completely smooth. Season with salt and white pepper.
Finish with Lemon
Return to gentle heat. Stir in lemon zest and half the crème fraîche.
Serve
Ladle into warm bowls, swirl in crème fraîche, drizzle with olive oil, and scatter extra mint leaves.
